We have just downloaded the codec pack.
If I dynamically link LAVAudio.ax, LAVSplitter.ax or LAVVideo.ax in the archive from my program, will my built software also be GPL licensed?

If you declare your software to be 'Freeware' then it has no specific license.
My software is Freeware. You may do as you wish with my software.

Bundled software such as LAV filters, which is built on FFmpeg, is covered under LPGL 2.1
Other bundled software such as the MPC-BE filters is covered by GPL 3.0

Am I correct in understanding that if the software I created was paid software, LPGL 2.1 would apply when using the LAV filter functionality with dynamic linking?

LGPL 2.1 Read that license for yourself

I have never read it as it is of no concern to me.
